Healthy Homemade Peppermint Fudge

I have never made homemade fudge before so I was not sure how this would turn out AND it is a pretty healthy recipe (and you know sometimes that can go two ways!), but I have to say it turned out AWESOME!! It was a hit at my vendors event and on the home-front… thumbs up! If my kids and hubby approve, mama is a happy woman! :)

 

Peppermint or Wild Orange Chocolate Fudge

Ingredients
  1. 3 1/2 cups cooked black beans
  2. 3/4 cup coconut oil
  3. 3/4 cup cacao powder
  4. 1/2 cup coconut sugar
  5. 1/2 cup honey
  6. 1/2 tsp pure vanilla
  7. 1/2 tsp salt
  8. 3-4 drops of doTERRA peppermint or wild orange
Instructions
  1. You will need to cook the beans first or you can use canned beans (rinse these first before you add them). I do recommend trying to do organic if you can. Add all of the ingredients into a food processor (I used my Vitamix) and blend until smooth. Pour or press (depending on the consistency you have) into an 8x8 dish and refrigerate until firm. Enjoy!
Notes
  1. I used 3 drops of peppermint oil and thought it was a perfect amount.
  2. It does get a little soft if not kept cold. I would recommend putting it into the freezer just before a party to ensure it stays fairly hard.
  3. I cut it up into small pieces as samples for my vendor event, but I think it would look so nice cut into slices and placed on a pretty dish!
