Zucchini Parmesan Chips

If you are looking for a way to get more veggies into your family’s diet, you HAVE to try this super tasty recipe for Zucchini Parmesan Chips! My kids and hubby went crazy for them!

Ingredients
  1. 2 medium zucchini
  2. 1 tablespoon grape seed or olive oil
  3. 1/4 cup freshly grated Parmesan
  4. 1/4 cup plain dry bread crumbs (I love Panko!)
  5. 1/8 tsp salt
  6. 1/8 black pepper
  7. Cooking spray
Instructions
  1. Preheat your oven to 450. Coat your baking sheet with your cooking spray.
  2. Peel your zucchini and then slice into 1/4-inch thick rounds. Toss the zucchini with the oil in a medium bowl. Then add the rest of your ingredients to that. Mix all together until your zucchini is well coated on both sides. Place the zucchini in a single layer on your baking sheet.Sprinkle the remaining coating leftover from your bowl if so desired.
  3. Bake until browned and crisp, 25 to 30 minutes. Remove with spatula. Serve immediately.
  4. Enjoy!

You can’t beat FRESH parmesan! I used by trusty Vitamix to shred my Parm. Turn your Vitamix on, turn the dial to 2 and then add your chunks of cheese. It takes less than 3o seconds to shred what you need! You can check out more Vitamix recipes here.  

This is a great recipe to make with the kids! You throw everything in a bowl and mix so the kids will love to help! I set out some marinara sauce for dipping and the boys loved it! Enjoy!

Yum, what a great recipe for zucchini chips! I've recently "gotten involved" with zucchini to make omelettes and zucchini bread, so I thank you for this recipe that my kids can crunch on. Zucchini is so incredibly healthy.

You really should try it! Not only are they yummy as chips, but you can shred it up and put it in muffins and casseroles and the kids don't even know they are eating a veggie :)
