Use Up Those Thanksgiving Day Leftovers

We had Thanksgiving at our new house this year so we had a lot of leftovers to go through! You really can only eat turkey, stuffing, casseroles etc. so long before you get sick of it! We ate through everything but the turkey and I wanted to try and get creative with what we had left.

Boil the carcass in water for several hours. This will give you a lot more meat which just falls off the bone (I had a TON I got from this which would have went to waste!!) and you have turkey broth that you can freeze to use later in soups (of course separate the bones from this before you freeze it)! You can freeze in gallon freezer bags or freezer containers. I like to pour some in ice cube trays so I have small portions on hand as well. 1 cube= 1 tbs of broth.

This is actually chicken broth I had leftover from making stuffing, but you can do the same with any broths/ stocks

 

Turkey Pot PiesI use this pie maker for mini pot pies and dessert pies. They are a great size to make a bunch and then freezer for later! 

Shredded Turkey with BBQ. Mix together and put on a bun.

Turkey Tacos/Wraps/ Salad:  Instead of using a pound of meat for tacos, I use half and then fill with beans, rice (or Quinoa etc.), tomatoes, corn etc. and it is SO filling! Just sub your ground beef for turkey! Add some cheese and sour cream…YUM! This will save you a lot of money too! 

Turkey Mac-n-Cheese: I make tuna casserole pretty often so I just did the same thing, but with turkey!

  • Make your Mac-n-Cheese according to the directions (love the Annie Organics brand). Throw in a casserole dish
  • Add veggies your family likes (peas, carrots, edamames, broccoli etc.). I also have pureed veggies in my freezer that I make from veggies about to go bad before we have had a chance to eat them so you can throw that in there too (great for picky eaters because they will never know!)
  • Add your turkey (or tuna, chicken etc.)
  • Mix all together
  • Melt a little butter and mix in Panko bread crumbs (in a small pan) and pour over your casserole
  • Since everything is warm at this point I just put it under the broiler for a few minutes to crisp the bread crumbs.

I also froze a lot of my turkey into 1 pound servings. I ended up getting 11 meals/ servings of turkey from our leftover meat and the meat I got off of my boiled carcass!!
