Spicy Corn Fritters

These corn fritters were SO amazing! They were quick and easy which is always a bonus! I spiced it up with the dipping sauce and then had the kids use ketchup so everyone was happy. This is not one for the kids to help with as the oil you use to fry the fritters in can splatter and burn :)

Ingredients
  1. 1 cup flour
  2. 1/4 teaspoon baking powder
  3. 1 egg, beaten
  4. 1 teaspoon lemon juice
  5. 1/2 cup water
  6. 2 cups corn (frozen or fresh)
  7. 1/4 cup cilantro, finely chopped
  8. 2 teaspoons Cajun Seasoning
  9. 3 tablespoons Grapeseed Oil
Instructions
  1. Preheat oven to 350°F. Mix together the flour, baking powder, beaten egg, lemon juice, and water until fully combined like a batter. Add in corn, cilantro, and Cajun Seasoning and mix together. Heat a sauté pan with your Grapeseed Oil and scoop fritters with a small ice cream scoop/ spoon or small measuring cup and press into pan until they form small circular cakes. Brown the fritter on both sides and then remove from pan placing on a parchment lined baking sheet. Add more oil to pan if needed to prevent sticking. Once all the batter has been used, place in the preheated oven for 5 minutes. This helps to make sure the inside of the fritters are cooked. Remove from oven and serve warm!
Notes
  1. I used my Wildtree Sweet & Spicy Thai Chile Sauce for dipping which makes it spicy, but the kids loved theirs with ketchup! These were SOOOO delicious and easy!
