6 Easy Recipes for March Madness

It’s March Madness time which means parties and FOOD! I received a box from Kroger with some goodies to make in honor of March Madness.

I asked you all on my Motherhood Support Facebook Page and my Facebook Community Group what you would make with these products and I got a lot of cool answers! You can see in the picture below what I received. What would you make??!

Here are some of the ideas you gave!

Cheesy nacho dip & chips. Add cheese, tomoatoes, salsa, beans, chicken and jalapenos. to a crockpot. Heat until melted. Use chips to dip! Is there anything better than a big bowl of queso?! 

Chicken Nachos. Layer the chips, then add the chicken & beans, jalepanos, and tomatoes. Add a little salsa to the top & bake a little to warm. Melt the cheese & drizzle it over the top. Maybe take some of the jalepanos & dice them up & add to the melted cheese for drizzling too OR you could get shredded cheese & do the steps above, but leave off the tomatoes & just use salsa. Then use 1/2 block of the cheese with the can of tomatoes & melt those together & use as a dip with leftover chips…..then you get 2 appetizers instead of 1!

Chopped Edition! If you literally have to use all in one dish, crush the party mix and add the inside “cream” of the cookies. Use that to coat the chicken and cook on the stovetop for a few mins until warm. Then bake chicken nachos with all the remaining ingredients as toppings. The cream helps keep the chicken together! 

Chicken tortilla soup. Assuming you some pantry ingredients available, add chicken, salsa, beans, and some of the cheese along with some chicken broth and a can of cream of chicken soup and corn. Put in the crock pot (4-6 hours) or Instant Pot on Manual for 10 min. Garnish with jalapenos. Use the Party mix to hold off the herd while you prepare the soup. Cookies for dessert!

Black Bean Burger. You could crush the snack mix, drain the beans, mix them together and make a spicy black bean burger (or add the chicken for black bean chicken burgers). You can use part of the cheese block with the salsa and jalapenos to make a queso for the side. Finish off dinner with the cookies. Not sure if there would be other ingredients required for the burgers, but they could be baked, pan-fried or grilled! I absolutely LOVED this idea! 

My idea… Nacho Bar:

  • Heat up chicken, ground sausage, and ground beef separately and keep warm in crock pot or Instant Pot, (if you haven’t heard of the Instant Pot or want to learn more, check out my post with all the deets to get you started with a beginner video!) then people can add what protein they want over the chips. 
  • Have guacamole, avocados, jalapenos and additional toppings available so your guests can choose their toppings. 
  • You could even spiralize some sweet potato and make sweet potato chips so people have chip options
  • If you have someone who is dairy free, heat the cheese up separately and then make a vegan cheese sauce! I like this one from the Detoxinista. 

Dessert: Dirt Pudding with the sandwich cookies or crush them up and add to ice cream! YUMMMM!
