Cranberry Orange Muffins

I love the service and food I receive from Health Savor! You can see below some of the foods I initially tried. Chef Brandon wanted to share this new healthy recipe he has come up with, Cranberry Orange Muffins! I am totally obsessed with muffins, but know they can be a lot of empty calories. Chef Brandon’s recipe is 100% sugar and carb-free! Now you can splurge without the guilt!

CRANBERRY ORANGE MUFFINS

Ingredients

  • Paper liners or oil or butter for greasing muffin tins
  • 8 farm fresh eggs 
  • 1 orange with only half it’s peel, pureed 
  • 1/2 cup coconut oil 
  • 3/4 cup coconut flour 
  • 2 cups almond meal 
  • 4 teaspoons baking powder 
  • 2 teaspoons baking soda 
  • 1 1/2 teaspoons ground ginger 
  • 8 oz dried cranberries
  •  1 – 1 1/4 cups stevia, or to taste
  • 2 teaspoons vanilla

Instructions

1. Put 18 liners in muffin tins or grease with butter or oil . Preheat oven to 350°.
2. Batter may be mixed by hand, with an electric mixer, or a standing mixer.
3. Put eggs in a large bowl and beat. Add pureed orange and blend in. Add all other ingredients and mix well. Taste for sweetness and add more stevia as necessary.
4. Use the 1oz scooper to portion into muffin cups.

This recipe will make around 32 mini muffins. I love to make a big batch of muffins and freeze them for a quick, on the go snack or breakfast.  Enjoy!
