Caribbean Meatloaf

Hey all! I know it has been awhile since I posted, but I have been enjoying my summer so much I haven’t felt much like opening my computer!! However, after my dinner last night I had to share this super yummy and easy recipe with you! I feel like all I want to do is play in the summer and cooking is just not a big priority. Grilling, eating out or scrounging  for leftovers just about sums it up for us, but this meatloaf was so tasty and took no time to prepare. Enjoy!

Ingredients
  1. 1 pound of ground beef
  2. 1 (14.5 oz) can of Red Gold Diced tomatoes with lime juice and cilantro, drained
  3. 1 egg
  4. 1/4 cup bread crumbs
  5. Salt and Pepper to taste
Instructions
  1. Preheat oven to 400.
  2. Mix all ingredients together.
  3. Cook for 45 minutes.
  4. Top with ketchup if you so desire!

Now that I have been able to experiment with the different flavors Red Gold has to offer in the tomatoes I have been thinking of all the ways I could use them in meals and it is making me excited to cook again! I love how flavorful the lime juice and cilantro tomatoes made my meatloaf and I didn’t have to add any extra seasonings! They have this same recipe using ground chicken and suggest making the mix into burgers. I would probably add my mango salsa on top of those for a sweet and spicy combo. YUMMO!
