How to use up those Tomatoes

I planted 4 tomato plants in my Tower Garden this year and so the amount of tomatoes I got was a little out of control. I was getting a steady flow in the beginning and then it seemed like they are started to ripen at the same time so I had to find creative ways to use them! :)

Classic BLT’s: If you have tomatoes, you HAVE to make some BLT’s! We LOVE them at our house because they are quick, easy and oh so yummy! Any meal where I can get tomatoes and bacon is good enough for me :)

Tomatoes, Basil, Mozzarella and balsamic: I got this recipe from a girlfriend and after she made it for us once, we were hooked! All you have to do is buy the mozzarella balls in the cheese section, cut them in half and lay them out on your plate or platter. Lay a fresh basil leaf over each cheese half and then a slice of tomato. Drizzle with balsamic and there you have a quick and easy snack! Tomatoes, Goat Cheese and Dressing: I LOVE goat cheese and I thought about a little twist on the above recipe, so I cut up some tomatoes, added crumbled goat cheese and drizzled some Tuscan oil from Wildtree over top. AMAZING! I had it for lunch a few times, but the kids seemed to eat most of it :)

Make your own pizza: I used some Wildtree pizza dough, pizza sauce and the rest of my mozzarella balls, some fresh basil from my garden and tomatoes. I added my chopped tomatoes over the top after I baked the crust for a bit because I didn’t want them to get too soggy. It came out perfectly! It was a great twist on the standard pep and cheese pizza.

Make your own Spaghetti Sauce: I cannot say how much I love my vitamix and it was SO easy this year making big batches of spaghetti sauce and freezing it in individual portions for later use!
