Food from our Garden

I started small with our garden this year since it is our first time. My Tower Garden has 20 slots for plants and an extender for 8 more additional plants. I am happy I held off on the extender so I could get an idea of what we would eat from our garden. I like being able to go out daily and just pick off what we need :) The hard part is switching things up with the produce you are getting from your garden. Here is just a few ideas for you that I have been trying out in my kitchen!

  • Cucumbers and Tomato Salad: Simple, easy and delicious. Cut up your cukes and  tomatoes and pour some Italian dressing over it all. Marinate it for a few hours and serve as a side dish or for snack time!
  • Sautéed  Squash: I love my Rancher Rub from Wildtree. It is so versatile and one of my favorite ways to use it is to cup up my favorite veggie, throw some grapeseed oil in the skillet and sprinkle my Rancher all over my veggies and saute. YUMMO!
  • Baked Summer Squash: I could only have SO much grilled squash so I turned to my good old friend google to find a new recipe. I found this one for baked summer squash. I LOVE me some Panko breadcrumbs and parm cheese so I had to try it. It was SO good! I poured some pizza sauce on the side for dipping and the kids loved it!

  • Quiche Kim has some great Quiche recipes on the blog and it is a great way to use up that zucchini and squash from the garden!
  • Wildtree Crispy Kale Chips: I HAD to try this out on my garden Kale and it was SOOOO good! EASY and oh so healthy!
  • Salads: I am not a huge salad person, but my boys love it so I love being able to go out every few days and getting some greens for salad and it tastes SO fresh coming right from your yard!
  • Greens for Smoothies: Use those greens in your smoothies! If you have too many greens and can only eat so many salads, throw them in the blender with some fruit and you have yourself a delicious smoothie! You can also freeze your greens and then throw them in the blender that way too!
  • Peppers: Stuffed, sautéed, throw them in casseroles, eggs or they are great for  freezing too. You can throw them in your chicken fajitas straight from the freezer!
  • Herbs: Check out my latest post on what I have done with my crazy, out of control herbs! One thing on my list this week is to use my Wildtree Pizza Dough, some pizza sauce and top with tomatoes and basil leaves from my garden and fresh mozzarella rounds! I will let you know how it turns out!!
