Stuffed Portabella Mushrooms

I have been using my freezer meals that I made before Grayson was born for most of our dinners. It has helped a TON because I don’t really have to think about dinner. Our other nights, when I want to switch it up, I make easy stuff…. spaghetti, BLT’s, leftovers, or order out. Last night I switched it up a little. A few weeks ago I tried a portabella stuffed mushroom and it was amazing!! SO I ordered some portabella mushrooms from Green Bean this week and got creative!!

I just used what I had in the kitchen- sauteed ground beef, onions, green pepper and tomatoes and added garlic salt and an italian season blend. While that was cooking, I cut the stems off and scooped out the “gills” of the inside of the portabella. Then I filled each one with the filling. Topped each cap with mozarella cheese.

Scoop out the "gills" with a spoon to make room for your filling

Put it in the oven at 350 for 20 minutes. I broiled them at the end just to brown the cheese a little.

They were AMAZING!!! Awesome flavor and SOOOO yummy!!  What I love about my new fav dish is that you can fill it with anything and use the goodies you have in the kitchen that day!!
