Feature Friday: Easy Lunch Boxes!

Today’s feature Friday blog is: It’s Not Just Lunch, The Easy Lunch Blog. This website is A-MA-ZING. Kelly Lester has her own Easy Lunch Boxes that are fantastic for packing lunches for your family! We felt like we hit the goldmine when we found inspiration at their Yummy Lunch Ideas page. We were in awe when we saw moms of multiple kids making quick, easy and healthy lunches for their families. You can buy your own lunch boxes from Easy Lunch Boxes for only $13.95 for a set of four and they come in four adorable colors! There is also great cooler bags that fit all four lunch boxes. I have purchases a ziploc version of these lunch boxes at the store BUT Kelly’s version is BPA free AND it’s so much of a better quality after comparing the two. The ziploc version is pretty flimsy and not as nice. You can make them ahead of time and even better it only takes 5 minutes – literally! Jennie and I put it to the test and we grabbed a few things from our fridge and put the timer on  to see if we could do it in 5 minutes or less! Here’s Jennie’s reaction to using Easy Lunch Boxes…

I was so excited to try my lunch containers and Kim mentioned that we do a packing lunch showdown! Normally our lunches consist of leftovers from dinner the night before, something that I have from my batch and freeze menu, ie. homemade nuggets or yogurt/cottage cheese with healthy extras mixed in. In addition to that I try and have a side of fruit and/or a side of veggies. SO… in 5 minutes I got all of this out (see pic below), packed it and put everything away. It only took me two minutes to actually pack all the food!! Cody’s lunch includes leftover chicken pot pie (I will have to post this recipe soon- time consuming but YUMMY!), carrot sticks and hummus, & strawberries.  Quick, easy and healthy! What I love about the containers is that it keeps everything together so I don’t have 10 different mini containers that I have to fish out of the lunch box! Thanks Easy Lunch Boxes!

Kim used spinach nuggets, hummus with eggplant, cheese, crackers, goldfish, apples and a home made whole grain blueberry muffin (made ahead of time in a large batch and kept in the freezer). I found the heart shaped silicon muffin cups at Target! Here’s Kim’s before and after pics:

It CAN be done in less than 5 minutes! It’s also worth noting in their lunch making hints and tips there are some really great resources for unique ways to leave notes and little surprises for your kids they will really love! I will definitely be getting some of the “bento” accessories to have more lunch box fun as my kid(s) get older! Thanks Easy Lunch Boxes!

So I obviously missed the BOXED part of the lunch post on FB. However, we do like our naked nuggets leftover and cold…I often put leftovers on salad. Great ideas – thanks.

"Boxed" or not, I am ALWAYS looking for new ways to reinvent lunch time with fun and healthy foods! The only way that happens is when we share the ideas with each other :) Thx! Jen

You may also be interested in the leakproof stainless steel snack and lunch containers from Steeltainer.
