Edamame Hummus with a Kick

  • 1 c frozen shelled edamame
  • 1 clove garlic
  • 1/4 tsp cumin
  • juice of half a lemon
  • 1/2 tsp chili powder
  • 1/4 tsp salt
  • dash of pepper
  • 1/4 c olive oil
  1. Prepare edamame per package directions. Drain and run under cold water. Once cooled, add to remaining ingredients. Blend all in a food processor until smooth. Add olive oil to achieve desired consistency.

This is awesome!  Not only is it healthy, but it is packed full of protein! Use it as a dip for pita chips, pretzels & veggies OR as a spread on sandwiches! It is pretty spicy so cut back on some of the ingredients to suit your taste!
