Healthy Mac & Cheese

  • 1 1/2 c elbow macaroni
  • Nonstick cooking spray
  • 1 tbs olive oil
  • 1 tbs whole wheat flour (see our Super Flour recipe)
  • 1/2 c nonfat or skim milk
  • 1/2 c butternut squash or cauliflower puree
  • 1 1/2 c shredded reduced fat cheddar cheese (about 8 oz)
  • 4 oz reduced fat or non-fat cream cheese
  • 1/2 tsp salt
  • 1/8 tsp paprika
  • 1/8 tsp pepper
  1. Cook mac according to package directions
  2. While the mac is cooking, coat a large saucepan with cooking spray and heat over medium heat. Add the oil, then the flour, and cook, stirring constantly, until the mixture resembles a thick paste, 1-2 min
  3. Add the milk and cook, stirring occasionally, 3-4 min. Add the veggie puree, cheddar cheese, cream cheese, and seasoning, and stir until the cheese is melted and the sauce is smooth. Stir in the mac and serve!
